Rendang & Crispy Corn Fritters Recipes

When we talk about Indonesian food, it’s not just about taste — it’s about tradition, family, and the joy of sharing meals together. Two dishes that always bring people to the table are the famous Rendang and the beloved snack Dadar Jagung (Crispy Corn Fritters).



Here’s how you can make both at home.

🥘 Rendang

This recipe, originally shared by Cookpad user ihdanas, uses the method of sautéing the ground spices first for a richer, more fragrant flavor.

Ingredients

Main Ingredients

  • 1 kg beef, cut into pieces
  • 2 liters coconut milk (from 2.5 grated coconuts)

Ground Spices

  • 125 g shallots
  • 125 g curly red chili
  • 10 cloves garlic
  • 1 thumb-sized piece of ginger
  • 1.5 tbsp coriander
  • 1 tsp pepper

Whole Spices

  • 4 bay leaves
  • 2 turmeric leaves
  • 2 star anise
  • 4 cardamoms
  • 1 cinnamon stick
  • 5 cloves
  • 5 cm galangal (bruised)
  • 3 lemongrass stalks (bruised)

Seasoning

  • Palm sugar (to taste)
  • Salt (to taste)
  • Powdered broth (optional, to taste)

Instructions

  1. Blend all ground spices until smooth, then sauté until fragrant.
  2. Add the beef and stir until coated with the spices.
  3. Add bay leaves, galangal, lemongrass, turmeric leaves, star anise, cloves, and cinnamon. Stir well.
  4. Pour in the coconut milk slowly while stirring. Season with salt and palm sugar.
  5. Use the on-off cooking method: cook for 30 minutes, rest 30 minutes, cook 10 minutes, rest again, and repeat until the beef is tender.
  6. Continue cooking and stirring until the sauce thickens, oil separates, and the beef becomes dark and rich.

👉 Serve with rice, fresh vegetables, and sambal ijo (green chili sambal).

🌽 Crispy Corn Fritters (Dadar Jagung)

This recipe, adapted from Ismy Maulidasary, is a favorite snack in Indonesia — crunchy on the outside, soft and flavorful inside.

Ingredients

  • 2 medium-sized sweet corn cobs
  • 2 scoops all-purpose flour
  • 1/2 tbsp rice flour
  • 1 tbsp powdered broth
  • 1 tsp salt
  • 1/2 tsp coriander powder
  • 1/2 tsp pepper powder
  • 1 scallion, sliced
  • 1 celery leaf, sliced
  • 1 tbsp margarine
  • 120 ml water (adjust as needed)

Instructions

  1. Remove the kernels from the corn cobs.
  2. Mix the corn with scallion, celery, seasonings, and both types of flour. Stir well.
  3. Add water and margarine, then stir again until you get a smooth, thick batter.
  4. Heat oil over medium flame. Drop spoonfuls of batter into the pan and fry until golden brown.
  5. Remove from oil, drain, and serve warm.
